Hop on Poppy Noodles

This is my favourite vegetarian dish when we have guests. It's relatively quick and easy to make in large quantities if need be.

  1. Boil 1/2 pack (1/2 lb or 225 gm) of whole grain spaghetti noodles for 10 minutes. Take off heat and drain

  2. Stir in
    1-1/2 cups light sour cream
    1 tablespoon poppy seeds
    1/2 teaspoon salt

  3. Gently fold in one chopped tomato

  4. Place in greased pie plate and cover top with parmesan cheese

  5. Bake at 180C (350F) for 20 minutes

  6. Makes 4 servings
