This is my favourite vegetarian dish when we have guests. It's relatively quick and easy to make in large quantities if need be.
- Boil 1/2 pack (1/2 lb or 225 gm) of whole grain spaghetti noodles for 10 minutes. Take off heat and drain
- Stir in
1-1/2 cups light sour cream
1 tablespoon poppy seeds
1/2 teaspoon salt
- Gently fold in one chopped tomato
- Place in greased pie plate and cover top with parmesan cheese
- Bake at 180C (350F) for 20 minutes
- Makes 4 servings
