Peanut Butter Soup
You stumble into your kitchen on a Friday evening. You've got to have something to eat
before heading out for a night on the town. All you can find in the cupboard is a jar of peanut butter.
Never fear, there's still hope!
Ingredients
- 1 cup smooth peanut butter
(trust me, you wouldn't like this with the chunky stuff)
- 4 cups vegetable stock
(you have 3 options here:
- save the water from boiling up some vegetables
- buy those strange cubes of vegetable stock and dissolve in water
- just use water.)
- 1 1/4 cups milk
- 1/2 teaspoon salt
- 10 or so grinds of mixed or black pepper
(basically to taste)
- Good pinch of nutmeg
(SQUEAL!)
- 2 teaspoons Madras curry powder
Instructions
- Put peanut butter, stock, milk, and seasonings into a soup pan and whisk together.
- Bring slowly to a boil.
- Serve soup. Good for six people.
